Have you ever had cactus? If so, how do you cook your cactus? If not, you’re missing out and definitely should try it sometime- you’ll be surprised to find how delicious it is. There are many ways you can cook cactus, but Ensalada de Nopales (Cactus Salad) is one of my favorites. It’s simple, easy to make, healthy, and delicious. I like to eat it with saltine crackers or on a tostada. Try it and let me know what you think of it!
Side note: I purchased my cactus already cleaned and ready to go, which can usually be found at any local Mexican store, so I did not have to go through the steps of peeling and cleaning the cactus.
Prep time: 10 minutes | Cook time: 20-30 minutes | Total time: 30-40 minutes
- 5 Cacti/Cactus, diced
- 1 Roma tomato, diced
- 1/2 Of an onion, diced
- 2 Jalapeño peppers, diced
- Cilantro, finely chopped
- 1 Lime, juiced
- Salt to taste
1. Place the cactus in a medium pot with just a bit of water- about a cup or two- and salt. Let it boil over medium/high heat until tender- which usually takes about 20 minutes. You don’t want to use too much water.
2. Once the cactus is tender, remove from the pot and place it in a bowl.
3. Add in the tomato, onion, jalapeño, cilantro, lime, and salt to taste- Stir it well and ENJOY this delicious Ensalada de Nopales (Cactus Salad)! It’s that easy!
